Italian Style Mushrooms & Spinach

Sautéed spinach and mushrooms with onion, garlic, balsamic vinegar, and white wine. This tasty vegetable side dish is a typical recipe of Southern Italy, specifically Apulia.

Prep time: 20 min

Cook time: 10 min

Servings 4

 

Ingredients:

▢ 4 tablespoons olive oil

▢ 1 small onion, chopped

▢ 2 cloves of garlic

▢ 14 ounces fresh mushrooms, sliced

▢ 10 ounces clean fresh spinach, roughly chopped

▢ 2 tablespoons balsamic vinegar

▢ ½ cup white wine

▢ salt and freshly ground black pepper to taste

▢ chopped fresh parsley, for garnish

 

 

Directions:

▢ Heat olive oil in a large skillet over medium-high heat. Sauté onion and garlic in oil until tender. Add mushrooms and fry until they begin to shrink, about 3 to 4 minutes. Toss in spinach and sauté, stirring constantly for a few minutes, until spinach is wilted.

 

▢ Add vinegar, stirring constantly until it is absorbed, then stir in white wine. Reduce heat to low and simmer until wine is almost completely absorbed.

 

▢ Season with salt and pepper to taste and sprinkle with fresh parsley. Serve hot.

Prices in Montana are 8.2 cents per gallon higher than a month ago and stand 126.1 cents per gallon lower than a year ago. The national average price of diesel has fallen 0.2 cents in the last week and stands at $3.84 per gallon.
